As I talked about over in this post, I’ve been loving the act of meal prepping. Mainly because it saves you so much money, but I’m also learning some really good, clean recipes along the way. I thought it would be good to share the ones that I’m archiving and will surely be making again and again with all of you — you know how much I love to spread the wealth with anything that lands well in my life, so why should clean, good food be an exception?
I got this recipe from Tone it Up (though I made a few simple tweaks). I belong to their nutrition program that I signed up for years ago and quite honestly up until I saw them on my Instagram, I had completely forgotten I had the PDF! I spent all Sunday being lazy in bed, candles lit, bottomless coffee, and writing down recipes that I wanted to try for the week.
So let’s jump in!
VEGAN ALMOND BUTTER BREAKFAST COOKIES
Makes 12, serving size is 1 cookie
Materials & Ingredients
• 1 baking sheet
• 1 large mixing bowl
• Measuring spoons
• Vanilla plant based protein powder (I use Tone it Up)
• Egg whites
• Almond Butter (you could use any kind of nut butter or peanut butter – just know PB has more sugar)
Preheat the oven to *350
• Mix the ingredients together in a bowl
• Roll the dough into 2 TBS sized balls
• Flatten the balls with a fork two times (make a plus sign)
• Sprinkle sea salt on top
• Cook for 10 minutes
That’s literally it! That’s all there is to it. I’ve been eating about one a day for a mid-day snack with some fruit and it not only keeps me full, but it curbs any sort of sweet tooth that I’ve got going on (which is pretty much constant, haha)
